    Happy WSM Smoke Day!

Seems hard to believe that I proofread... Autocorrect is the pits! No sooner did I stop for the "coo" than the sky fell in. Fortunately, I just managed to get the ribs wrapped first. But I'm getting ahead. I wanted to do 3-2-1, but first I needed sauce. The #5 was easiest (the basic one...

    Happy WSM Smoke Day!

OK, Chris. This going to be a bit piecemeal, but as I dodge between showers and sun, I'll tell the tale of my Memorial Day "smoke". Hope it doesn't get too boring. I put the ribs out to thaw on Smoke Day and decided how to prepare them: mix together the last of my Cajun Spice and the last of...

    Happy WSM Smoke Day!

As far as I'm concerned it is -- though I'm calling it "smoke' day since my 14.5 is still out of commission. We've had constant cool drizzle all days, so not much inclined to stand out with the pressure washer etc. cleaning it up. But on the official WSM Smoke Day, I set up the meals for...

    Happy WSM Smoke Day!

Now THAT is a full day! And thanks for the tip about the empanadas. All in all, seems like you had a really great time!

    Happy WSM Smoke Day!

I would encourage anyone to try this out -- it was amazing! Ground chuck for one burger, teaspoon Worchestershire, 1/4 cup shredded sharp cheddar and one whole egg. It makes a really loose mix, but put a large thumbprint in the center to keep it from turning into a ball and stick in the fridge...

    Happy WSM Smoke Day!

I knew it. Shoulda been there!

    Happy WSM Smoke Day!

I failed at getting high heat once and yet the result was great at around 300*. Enjoy!

    Happy WSM Smoke Day!

OK, my smoke day contribution will be a single burger with Worchestershire, a whole egg and about a 1/4 cup of sharp cheddar on my grill in the rain with lots of maple smoke. The rest of the one pound of ground chuck will be added to a spaghetti sauce in the very near future. Why the whole...

    Happy WSM Smoke Day!

That is one great setup! If you weren't way up there in Michigan, I'd be there to get some tips -- and maybe dig into the results, heh? You've incited a great idea! We have very little space, but that doesn't mean I can't make my part (grill/smoker) mine. My wife has been dithering...

    Sweet and Simple Barbecue Sauce

Ok, Joan. This one wins! Simple and quick and I have all the ingredients :D . I'll probably sub chipotle powder or chipotles en adobo for hot sauce and may try taste testing a bit of the result with some fruit preserve.

    Canned Jalapenos

    Oh! I LIKE that idea!

    Happy WSM Smoke Day!

Oh, man! Thanks for the reminder, Chris. I've been really busy trying to finish our "settling in" process and getting my workshop set up so I can actually use it. (Yesterday, YES!) I discovered this week that my smoker was a mess internally. (Suggestion, don't seal up your smoker for a move...

    Improved Stuffed Jalapenos (w/ pics)

Ok, this is very much personal preference and others certainly may not agree. Why put it here instead of in Recipes? Because I've already posted the recipe in Recipes (be sure to also see my recent "Reply" there): https://tvwbb.com/threads/canned-jalapenos.92371/ . This current topic is more...

    Canned Jalapenos

I was looking for this recipe as a basis for another post, but I had forgotten that I wrote it up as "Canned Jalapenos". Truth is, this is (was?) my standard recipe for stuffed jalapenos using fresh jalapenos. I use canned occasionally for a different twist, but I typically buy 4 to 6 fresh...

You know you're getting old when...

Yeah, I've noticed that about me too. I sometimes try not to but it takes a real effort. Huh!

What, in your mind, is "barbecued chicken"?

Hope my post didn't get too crazfor y'all. One of them kept repeating for me. I've tried to clean it up.

What, in your mind, is "barbecued chicken"?

I came across this post and it reminded me of the first time I ever had really good home BBQ. Shortly after I got married and graduated, a good friend (from NJ) invited us over and grilled lemon chicken on his cheap charcoal grill. It was wonderful -- I didn't know you could do that with a...

What, in your mind, is "barbecued chicken"?

Joan, very timely bump! As I said just above, good BBQ chicken or smoked chicken with great BBQ sauce is one of the pleasures of this earth. I’ve gotten away from chicken since we moved. One reason is the great rotisserie chicken from Costco-- too easy to enjoy as is. But thanks to your...

    What the?

Agree with the first part, but definitely not the Piedmont either. The difference between eastern and western NC BBQ sauce wanders a staggering line throughout the Piedmont. I live on the eastern Piedmont (right next to the Triassic Basin that drops down towards the Coastal Plain), and this...

    What the?

One slider-- absolutely not! But I pour good NC BBQ sauce (eastern) over a 9 lb Boston Butt and would not consider that with this sauce. I'd really like to know what you think.
