    Meat storage/freezing?

I have a great relationship with a local butcher and have been going to him for over 10 years. 90% of the meat I purchase is from him and fresh when I cook it. Usually the only thing that goes into the freezer is ground meat and bacon as well as the odd chicken breast. With that being said we...

    Hellrazr Outdoor Cooking

I like the size of the Yama but with the type of grill the have for it, it looks like a small grilling surface. As well to get the charcoal basket and heat deflector to make the Yama versatile and increase its capabilities your looking at over $1000 for a portable grill.

    Hellrazr Outdoor Cooking

Has anybody had any experience with these BBQs. They just popped across my Facebook feed today. I took a look at some of the stuff they offer and its very interesting. Innovative designs and some out of the box thinking. On the downside very costly. For example $200 for the INCINARATOR...

    Aggressive Brisket Trim.

Usually when I decide to smoke a brisket I put in an order at my local butcher (Real Deal Meats for any Edmontonian) a few days in advance and pick it up the morning I am smoking it. This summer I had the plan but life happened and the brisket landed in the freezer. Feeling a "hankering" for...

Beef rib rub my wife will eat?

My wife can not handle spice at all. She does not like it and it upsets her stomach. I use salt and pepper as a rub on my Beef Short Ribs and this is one of her favorite meals that I smoke.

    Short ribs for my bro

Smoking a Short Rib Plate is by far my favorite. Yours look great. I always underestimate the length of time they need on the WSM. I've got 2 plates in my freezer calling my name now. I think that may have to be my labor day smoke, followed up by short rib chili if there is any leftovers.

What was your favorite recipe or cook of summer 2021?

My best and worst are the exact same recipe. I have been making homemade macaroni and cheese for years and tweaking the recipe each time. Usually I put it on the WSM after the protein is off and resting when we have a get together in our backyard. As a week night meal I made a batch of...

    Wind got my Master Touch!

Reminds me of a story when I was a kid. My parents got a brand linoleum floor installed in the kitchen and us kids got a big speech about dropping things and damaging the new floor. Probably an hour after the speech and the installers had left I was drying scissors and spinning them on a...

    Texas vrs KC barbecue

Being from Canada the only exposure I have got to KC and Texas BBQ is what I have seen on TV, Internet and here. When doing my research for the best way to cook brisket the main name that kept coming up was Aaron Franklin. I read his books, watched and read what I could find on the internet...

Trays that Smokehouse serve Barbecue on?

What I would like to try one day when lots of friends and family can sit together at a table again is place a large wood serving board on the middle of the table, one that is the length of the table and fill it with all kinds of BBQ, piles and piles. Cover the rest of the table in Butcher paper...

    18.5 WSM Water Bowl Options

I just went to the Arbor Fabricating website to see how much it would be to purchase and ship the charcoal basket and minion starter. The cost of the 2 items is $97 and the shipping here to Edmonton is $67.54. Impossible to justify the purchase when shipping is 2/3 the price of the product. I...

I wonder what charcoal sales will be like this year?

LOL I just checked your location and see that you are in Edmonton as well. BBQ Country is average price for Jealous Devil and seems like they always have some in. At $35 a bag it is on the costly side though. Have you checked out Backyard Grills in St. Alberta they have good selection of...

I wonder what charcoal sales will be like this year?

I am assuming you are not to neat to one of the big BBQ stores in Edmonton or Calgary. I noticed the same thing nothing at any of the big box stores for the longest time. Gave me the opportunity to try out Jealous Devil lump that I can pick up 15 minutes away here in Edmonton. It would be nice...
