Late to post Thanksgiving Turkey Pics

I cooked our turkey on the WSM again this year. Honestly, I have been cooking it the last several years either on the Performer or more recently the WSM, and my family won't let me cook it any other way. Fine with me because it nearly foolproof, and turns out fantastic every time. I didn't have...

    First Brisket Cook

Posting this today, but did this cook yesterday for WSM Smoke Day. I cooked my first brisket Friday night/Saturday morning. Like many "first times", didn't need to be as nervous about it as I was. Started with a nice prime packer from Costco. Bought it back in February when they had a sale...

    Tri-Tip on the Performer

Picked up a nice prime tri-tip over the past weekend, and cooked it on the Performer Sunday. Served up with some sautéed mushrooms, asparagus, and brussels sprouts. Deeeeelicious!

    Costco Haul on pork butt

Our local Costco had packs of boneless pork butts for a $1.89/pound, so I went to pick up a pack. Apparently they are also taking $4.50 off per pack right now, so I bought 2 packs. 28 pounds total of wonderful pork butts. After splitting a couple of the roasts in half, I vacuum sealed each...

    Thanksgiving Success

Had a really nice Thanksgiving Day at home with just DLSW and son (and cat). Not many pictures, but fantastic meal, good company, and plenty of 'thankfulness'. Tuesday: 12lb, fresh turkey purchased at Costco. Spatchcock and dry brine the turkey. My spatchcock skills are basic at best, so...

    Charred Hatch Chiles

My local grocery store finally had some Hatch chiles in stock. I bought all they had out, which was only a few pounds. The produce manager said they will get more next week. Roasting on the Performer, steaming in a paper bag. It's hard to beat the smell of freshly roasted chiles steaming in...

    Pork Butt on WSM 18.5"

Cooked a pork butt on the WSM yesterday. Starting weight was about 11lb, and I did not trim anything off. Dry brined overnight, then rubbed with MMD. On the WSM about 9:15a (lazy morning), and it was an almost 12 hour on the dot cook; pulled it off at about 9:15p. I had a medical appointment at...

Late Entry for Smoke Day Cook

Late to post, but I did cook this yesterday on Smoke Day. Another successfull pork butt on the WSM. I have had the WSM for a few weeks now, and all I have cooked on it are pork butts while I learn the nuances of it. Turns out great every time.

Welcome to the Family, New (to me) 18" WSM

The Social Worker who works for one of my teams at our hospital let me know recently that her husband wanted to sell his 18" WSM. He bought a PBC a couple years ago, and likes cooking with it better than the WSM. Their loss, my gain. For a very reasonable price I brought it home today. Truth be...

Lodge Skillet Needs a Little Help

I have a Lodge skillet that needs a little help. The cooking surface has become pretty rough, and for lack of a better description, 'chunky'. See attached photo. I'm thinking of just stripping it down and re-seasoning. Is there something else I might try first?

    Pork Butt on the Performer

Scored a nice sized pork butt at Lucky when we were picking up some basics. Cooked it up on the Performer using the snake method. I gathered the coals up towards the end, and the pork butt finished just as the coals were dying out. Perfect timing.

    Kettle Fried Chicken for Dinner

Made some kettle fried chicken on the Performer tonight for dinner. Side salad of spinach, mushrooms, snap peas, mozzerla, cheddar, and some left over roast beef. Used LFC - Chicken Fry. Cooked at about 375-400ishF for an hour, finished temp about 200F. Shatteringly crisp, and my dear wife...

    What is this?

Does anyone know what this is? It has a slight 'Weber-ish' look to the lid and such, but I don't know. I'm certainly no expert. In the interest of full disclosure, I posted this originally in the For Sale forum, where it was suggested...

Not Sure What This Is - Local FB For Sale Does anyone know what in the world this grill is? I'm guessing it's not a Weber, but I'm certainly no Weber product expert by any means. I don't know if I would actually but it, but maybe?? EDIT: I'm not sure what the relevance of...

    Hello from Utah

Good morning everyone! My name is Karl, and I'm from just West of Salt Lake City, UT. Like many, I have lurked around this board for a while, and decided it's time to make it official. I currently own a Weber Performer Gold (2014), bought new, and I love it to death. I have grilled, smoked...
