    I just sear the meatballs, flip them to sear the other side, pour over the sauce and cheese, raise the pan and move the baskets to indirect. I guess you could check temp but I found that once both sides are seared they’re done. I never time it. …but it usually takes a beer to get that far and...

    The only issue with Costco pork butt is that (around here) they’re boneless. I like that for certain applications but not for others.
