20 degrees out so it’s Jerky time!

I made some spicy beef jerky for my son and his girlfriend for Christmas using every hot sauce and cayenne pepper in the pantry and decided to make teriyaki jerky for us today.

    Brett-EDH’s char sui pork

I used Brett-EDH’s “secret” recipe for char sui pork tonite on my Performer. I cut back on the 5 spice because that is an assertive taste I don’t really enjoy so I put enough in to know it was included, but not overpowering. I had a remote probe in to monitor the temp., but that wasn’t very...

    Small brisket point cook

One of the greatest things about moving to Idaho (besides being the home of Snake River Farms), is that I can buy a brisket point cut without having to buy a whole packer and cutting it into the point and flat. Our local Albertson’s (also HQ,d in ID) had Cherry Creek Farms points cuts, so I...

    On the smoked meatloaf train

My best effort, so far. 4 1/2 hours at 250 degrees over pecan and hickory. Two really thin slices of three pepper cheese (jalapeño, habanero and ghost) in the middle gave it an interesting and nice, mild heat note.

    Competition ribs at home

Yesterday, I smoked a rack of Baby Back Ribs, competition style. While I haven’t competed in years, once I became KCBS Contest Rep., my home cooking was much more simple than making competition style chicken, ribs, pork or brisket. Now that I’m retired and an empty nester, I have a little more...

Cardogs salmon 2 ways and Grilled Halibut

My neighbor just got back from fishing in Alaska and asked if I would smoke some fish for him and keep some for my effort. He is not a BBQ’er and wanted tips. We invited him and his wife for dinner. I made my BBQ mentor, Jim Minion’s Official Cardogs Salmon recipe 2 ways as an experiment. Hot...

    Self-Superannuated (almost!)

After nearly 15 years as a KCBS Rep, I have decided to call it quits this year. I got started on this this website and in BBQ and then in competition and judging and finally as a KCBS Rep from my friend and mentor, Jim Minion (creator of the Minion method). I have been fortunate enough to have...

    Rub for wimps

I have a friend of my wife's coming over for ribs on Saturday. She cannot tolerate any heat taste and does not like the taste of cumin. She's hoping for a sweet rub (which can have spice but not heat). Any suggestions or ideas are greatly appreciated.

    Personal Favorite

What's your personal favorite BBQ meat to cook and eat. Which do you enjoy least, and why. BTW, sorry to say Burl Ives is dead. (He was a WA resident). My vote is for Kevin James (King of Queens).

    Future Success

Ray, you're a devilishly handsome guy. When your book is made into a major motion picture, who would you like to play you? (or would you like our membership to vote on it?)
