    Roadside Chicken

I did, 12 or so hours, left the oil out. Placed it back in to baste later. Used the WSM as a drum smoker - not pan, door open, hot and fast.

    Roadside Chicken

I know the last post was over a year ago but I HAD to chime in…I tried RSC with some thighs and bone-in breasts this weekend and MYGOD! I’ve read this thread several times over the years and never attempted it. Now…this is the only way I’ll make chickens. Listen to the reviewers: you NEED to...

    Roadside rotisserie chicken

So I didn’t end up using the rotisserie attachment for the kettle but rather used my WSM a bit like a drum smoker (no water pan, door open, lid on). Put four split, bone in breasts and 12 thighs…Hot and fast and cooked under an hour. The results? My good God why haven’t I used the roadside...

    Cold smoked cheese!

Welp, trying my hand at cold smoked cheese…sharp cheddar, habanero cheddar, and Gouda…cherrywood pellets in the smoker tube…let’s go! Follow the cook on Twitter @smokeboiz - also, going to smoke a whole bottle of bourbon later (not sure how) but I’ll keep you all posted!

    Roadside rotisserie chicken

I think I’ll try it same method as my al pastor cool - charcoal baskets on either side to prevent flare up. How long do you think I should keep the birds in the marinade? I was thinking a day should be ok - may just omit the oil all together!

    Roadside rotisserie chicken

Looking to follow the classic roadside chicken recipe (https://tvwbb.com/threads/roadside-chicken.33874/) but want to try and do whole chickens over the Weber kettle with the rotisserie spit. Anyone ever try whole chickens with this method? What about whole chickens on the WSM and finishing on...

    Smoked tacos al pastor

Mike - good luck today! And thanks for the bday wishes. Yesterday the cook came out pretty good. Given the amount of prep/time that goes into the cook, I am not sure I’d do it again for a small gathering. The meat was tender and the marinade was good but probably could have been blended to be a...

    Smoked tacos al pastor

Finished product, around 2 hours. Lots to discuss but I think the bourbon is taking hold! Thanks for all the bday wishes and advice! Debrief tomorrow!

    Smoked tacos al pastor

Alright, al pastor going on around 4PM EST, so in the meantime, I smoked some veggies and peaches over hickory and cherry for some salsa with the tacos…we’re getting there!

    Smoked tacos al pastor

This is great advice; luckily it’s just going to be myself, my wife, and my two young children who will probably have a bite. I’ve seen the shave/trim as you go method on most YouTube videos as the the butt is fatty and usually cooked low and slow. Not sure how this will turn out hot and fast...

    Smoked tacos al pastor

Been awhile since I’ve posted but I am about to get a little bit crazy this weekend. In honor of my birthday Saturday, I’ve decided to make a recipe I’ve been longing to try for years: smoked tacos al pastor using the Weber rotisserie on the kettle. I am essentially following this recipe...

    Corned beef

Thanks, everyone - I'll trust the experts (and your guidance) on this one - gonna see if I can pick up a brisket this weekend!

    Corned beef

Looking to corn a brisket flat to make homemade corned beef for St. Paddy’s day. However, after reading some threads and reading amazing ribs.com and their recipe, I am a bit freaked out of the idea of using the wrong amount of Prague powder. The package says 1 teaspoon per 5lbs, other recipes I...

    Al pastor on WSM?

Thanks Chris (and others), sounds like it may be easier/better to use the kettle? But I like the idea of using the WSM as a hot barrel cooker, too. Would a fruit wood work here? I am thinking cherry but others have used mesquite - which I’ve never used. Now I am wondering if I should even smoke...

    Al pastor on WSM?

I got motivated to make tacos Al Pastor but am wary using the WSM may not be the way to go. I don’t have a rotisserie but found this thread highlighting some who have tried: https://tvwbb.com/threads/tacos-al-pastor.25321/page-2 Obviously, the point is for the meat to cook in its own juices and...

    Wobbly legs

Picked up a 22’ kettle on Craigslist. Legs very wobbly, one fell out when lifted. I’ve read a bunch of fixes but was wondering if anyone did anything that worked? Thanks

    Smoked burgers

Looking to do some smoked burgers for WSM smokeday but have found tons of recipes on YouTube, all with different variations. Anyone have a go to recipe/method for burgers on the WSM? Am I better off using the kettle? Looking for some tips! Thanks all!
