    12 hours in on the 12 hour butt, stalled about 170 IT I’m very happy I started it last night. Did a charge of fresh coal about 05:00, pleased to see that the K-Pro ash quantity is this much less than KBB, I may be a convert... time will tell.

    I have a mammoth almost 12 pound butt going on either late tonight or early in the morning. If I wait until morning I might go a little hotter and see how it goes. I’m undecided on when to start, actually even while I’m writing this I think tonight might be wise, this thing is huge!

    My last spatchcock was using Jacques Pépin’s “Fast Food My Way” recipe from a few years back. It translates to simple indirect method very easily! If the weather is noncompliant, the oven is almost as good.

    Repeat your initial course, that is not right, the bowl may or may not be safe and useable but, you spent good money for a good product, you deserve to get what you paid for. More pictures will probably be needed, that’s a QC issue and should not be your problem.

    Last nights spinner... Just about perfect, we were so hungry and the breasts were really just about the best I’ve had, the legs were a touch more pink than I’d like. Temps were fine. I turned the rest into stock after shredding the meat.

    Missed that, technique is still pretty much the same, torch to one side, maybe a little less time but, the weed burner will accomplish reasonable ignition.

    They are all good, big fan of spatchcock, rotisserie, oven roasted, pan roasted, fried, you name it! Smoked is always a hit. Lately, I’m spinning a lot, the Peruvian recipe is a big hit with my family.
