    Bringing the WSM up to temp with ATC

    I run a DigiQII and let the unit bring my WSM up to temp, never had an issue with over-stoking. I still use the minion method. I leave my top vent wide open, and leave all by one closed off, the one that is open is plugged except one hole where the fan is attached.

    Bark is more important to me on pulled or and brisket, not so much on ribs so I always foil. 2.5-3 unfoiled, 1 hour or till tender/temp foiled, never needed to mop them after the fact but may give it a go sometime.

    I went with an https://www.amazon.com/exec/obidos/ASIN/B014O6IMCI/tvwb-20 Alpha grillers one. It works well, but just takes a small bit of time (4-7 seconds). I still plan to get a Thermapen at some point tho.

    It happens, it took my unit more cooks than 2 to get it though. I've left mine alone as it doesn't bother me too much but I'm sure it will at some point. I'd not add more lard to it but try and clean the lips with warm water and soap or some simple green, or vinegar.

    If you use a marinade it does, my last run I tore foil paper and placed it at the bottom, helped some. - - - Updated - - - Nice! I used a buffalo sauce and lemon pepper marinade last few runs, may try a dry run next time.

    I went ahead and replaced the smaller sized grate with the same size as the top one (20'' iirc) and just went to my local home depot to get it. Can't recall if it's SS but I think it is, may be wrong on that part tho.
