    You certainly don't need an ATC. I use one out of laziness, but it's not mandatory. I'd say the biggest thing you're going to want to watch out for is having temps blast through your target temp. When I used to use water it would take considerable time for the cooker to get up to temp, but...

    12lb. butt is pretty big, I don't think you'll have luck at Costco either. I've never seen a 10+ lb. butt there before. For a piece that big, you might have to go to butcher, or talk to someone in the butcher department at Byerlys.

    I haven't heard of people putting foil over the water & sealing it in. Most people on here don't use water at all, and I only foil the whole pan to keep it from getting gross with drippings.
