    It was great, turned out really nice. No sandwich buns, so I used toasted, buttered bread, sauteed mushrooms and onions, and touch of BBQ sauce. Served on the fine china.

    Scored a nice sized pork butt at Lucky when we were picking up some basics. Cooked it up on the Performer using the snake method. I gathered the coals up towards the end, and the pork butt finished just as the coals were dying out. Perfect timing.

    My girlfriend volunteered me... OMG, what have I gotten into?

    Any chance you have access to a sous vide machine and a tub/conatiner? You could cook everything, vacuum pack it, and day of through all the packs in the sous vide container to reheat/hold. Bust open a pack as needed to serve.
