Problem with Pork Butt temp swings on WSM 22” and CyberQ

Yea,leaks would be my bet. I would probably also try Kingsford blue bag. I myself only use Weber charcoal when i want extra heat and longer cooks. Don't get me wrong. I don't think weber charcoal is the problem. I just think it's kind of expensive for every day use. But with your vents the way...

Problem with Pork Butt temp swings on WSM 22” and CyberQ

I'm kind of thinking maybe you opened the lid and didn't give it enough time for the fire to die down some. When the water started getting low,I'm sure that helped the temp to rise. You opened it up to add water, and air fueled the fire. It can easily take a 1/2 hour or more for the fire to...

    Red WSM with blue/white speckles

Interesting. Not too bad. Would probably have to clean the gunk/seasoning off. Not too much at all. Will have to give it some thought.

    Red WSM with blue/white speckles

I used to work in that neighborhood also. I live about 15 or 20 miles away. Anyone have a guess what something like that might cost?

    WSM 18.5 Purchase

Congrats. In my opinion you can't go wrong with the 18.5. I was looking really hard at the 14.5 when I was looking to get back into this. I was mainly thinking about charcoal savings. I am soooo glad i went with the 18.5. It really is easy on fuel. I was using Brinkmans in the past and they...

    Oven Cleaner

I have been using it on my grates since about the time i joined this forum. (read how Harry Soo puts em in a plastic bag and sprays em down and lets em soak) Works well. I have never tried it on the inside of my smoker though. I have worked very hard to get the insides all gunked up :)

    Briquettes vs. Lump?!

In my opinion you can't go wrong with Kingsford Blue bag charcoal. The reason you get mixed opinions is everyone has their own "secret" method:) The only way you will find out if you like lump or not is to try it. But if you are just getting your smoker dialed in. I would start with kingsford...

If you have a hair dryer/blower give that a try.

How Do YOU Clean Your WSM?

I put a clay saucer over my water pan,and foil over that so all I have to do there is throw the foil away. I have a big plastic hot water heater tray I scrub grates with a wire brush in. After that I usually throw them in the dish washer. I sometimes knock the flakes off the inside of the lid...

    Worth it?

I have an 18.5 and honestly don't think I could do better. It is simple, fairly inexpensive, efficient, and flat out works. I keep it inside so it will outlast me :)

    Party Q

Thats the one I almost bought when I was looking for a controller. I didn't get it because it was buttery powered. I was afraid the batteries would be going dead in the middle of a cook. I'm sure you will love it. It's easy and hassle free and works. Which means it will probably get used a lot

Favorite things to cook sub 5 hrs

Don't forget bacon. Bacon when it first comes off the smoker will melt in your mouth. BLT's with bacon from the smoker are mighty tasty.

    ThermoBlog Hot and Fast Brisket

I have not yet tried "Hot and fast" Brisket. My store has them on sale under 3 bucks a LB. I just might have to do it next weekend. The time involved in doing them slow keeps me from doing them very often.

    Replacement charcoal bowl 18.5

I think you have to call Weber for that https://www.weber.com/US/en/blog/burning-questions/where-can-i-find-replacement-parts-for-my-smoker/weber-35558.html

Weird First (pretty bad) WSM Smoking Experience

I agree with Timothy. I started out with ribs when I got my WSM,and they probably are the quickest and easiest thing to cook. I myself have a temp controller and set the knob around 275 for just about everything, and the higher temp definitely shortens the stall. Here is a good recipe for ribs...

    overnight smoke/temp drop

Finally got my charcoal. Got an email Friday saying it was in. Took 3 weeks but at that price it's a pretty good deal:cool:

    overnight smoke/temp drop

Yes I do. I just looked on the "order status" page and it says "processing" Looks like I need to contact the store I am having it shipped to (their Phone number is on the order# page). I think I will just let it go. If it ships I will pick it up but I am not going to pursue it.

    overnight smoke/temp drop

Hmmm. I paid for Weber Charcoal with paypal. It still says order pending. Paypal says they won't charge me till True Value processes my order. This might wind up more trouble than it's worth.

    Praise for WSM

I have to agree. I don't believe I will ever buy a pellet pooper, even if Weber comes out with one. I just love the smell of charcoal when it's getting started and cooking. In my opinion for just back yard BBQ. A WSM and a kettle you pretty much have it covered. I do also have a small Weber...
