    looks good - I have some in the frig for Easter Saturday lunch. I have always cooked direct, turned every 4-5 minutes, but your indirect sounds good. When grilling indirect, do you turn? or just leave on grill and wait for temp to hit?

    Another possibility is shorten cooking time by using high heat cook. http://www.virtualweberbullet.com/brisket4.html I went this route for Christmas brisket o rave reviews and it was my first brisket.

    Thanks all for the comments. Maybe I just need to expand my deck! Performer people - do you usually light charcoal in baskets, loose, or in a chimney? Side question - I have smoked burgers on the wsm, but not sure I ever really found a how to. Anybody seen a how-to/time guideline?

    Just picked up a performer with gas assist from craigslist last week. No baskets. So, I piled charcoal in the middle, and used the lp. How are you using the chimney? I had been using with newspaper in bottom, charcoal on top. (pre-performer). Thanks
