Advice - First time using the grate above water pan.

Hello from the UK !!

After some advice. I've got a fairly new Weber smoker. I've cooked 4/5 really succesful cooks (baby back ribs) so I'm ok with the general prinicples.

However cooking a few more sets of baby backs this time. (5 hours for cooking and in my house, 5 mins and they are gone !!)

I decided to use the lower grate, directly above the water bath. Do I need to treat these any different from the sets on the top grate? Does the water bath proximity have a bearing on the cooking method?

Any advice would be welcome....

No difference. Don't even let it enter your mind.

Do both levels the same. Some like switching top to bottom if you're doing two kinds of meat (say butt and ribs) because of thickness, etc.

But ribs? Nah, put 'em on and rest easy :D
