Smoke Day Weekend Butt & Brisket

I'm not in a typing mood, but here's how it went last weekend.
Cooked a butt on Saturday for Sunday's family guests, and I also cooked a brisket on Sunday.

I cut off an end of the flat planning to cure it, but said the heck with that.

I always go light for my first plate to make sure there's no shortage of food, there was plenty for seconds or thirds.

The butt and brisket are spectacular. Probably the nicest I've seen. The pictures could be in a photo journal. You are a master Bob. I absolutely love those beans. Perfect side for the cooks.
 
Pork, brisket, sides, photos.... all looking GREAT!

I try to remember to smuggle some Spotted Cow back to IL every time I visit Wisconsin. Really good stuff.

The color and texture of those beans looks amazing. I thought I was the only one who did egg and brisket sandwich. What's your opinion on the butcher paper with the shoulder?
