Tabasco Onions

DH made this some years ago and said it was very very good.

Tabasco Onions (serves 4)

1/4 cup olive oil
1/8 lb butter
2 tsp Tabasco Sauce
1 tsp. Red Chile Flakes
6 large yellow onions
2 TB Tequila

Heat oil and melt butter in a large, heavy frying pan. Stir in Tabasco sauce and red chile flakes. Saute onion slices until they start to soften, then add the tequila and continue to cook until soft, tossing occasionally with tongs or a large fork. Serve with green enchiladas, steak or hamburgers.

Are you sure the tequila is for the pan, or for the cook? :D Blanco, reposada, or anejo?

Interesting dish. I'd expect the slices to fall apart into rings.

SIX onions for 4?? I dunno ;)

With only 2T of tequila, I doubt it makes a difference. Now, if it was 2 cups.......... ;)
