I agree with like using water...I'm too used to having it. I did smoke a pork butt with the water 1/2 full and just let it steam off to the end. It allowed some moisture in at first and then outside to get a crispy bark that folks allows rave about on the butts. I was nervous the whole time...
Are you already throwing in the towel? I noticed not too long ago you had questions for your 1st comp. Just curious...cause you have the same set-up that I plan on using next year in comps.
I'm so glad someone ask this question right now. I've had mine for about a year now and was wondering the same thing. I just clean the grates but I think I'll leave the rest alone and let it do its thing.

Yeah, I agree with you J Biesinger...I think he does great work, but I'm looking for something a little different. Something simple yet unique. Kind of like a Mcdonalds logo. Not much to that thing, but I bet a 2 year old could point it out to ya...LOL!
I want to come up with a team banner with a logo for competitions in the future. Being a rookie at BBQ and not knowing how to draw I dont want to completely feel like a fool at my first comp. Who should I contact?
Does anyone know where I can get fresher wood from a supplier in the Oklahoma area. I've been using just the stuff in the bag from Lowes, but I want to know if it really makes a difference. I have a feeling the stuff you buy in a bag at a retail store isnt probably top quality.
