Stuffed Portabella Mushrooms

Good afternoon to all. I have tried this particular recipe three times now and the last one I did was oustanding.
In a skillet add the following ingrediants:
1. diced red onions ( 1/2 cup )
2. Ground turkey meat (1 lb)
3. favorite rub (I used Wild Willies)

Cook the red onions in 1/4 cup of white wine until transluciant.
Add the turkey meat.Once the turkey meat is browned, add the seasoning (the rub) I also added some Italian seasoning for additional flavor, just a light sprinkling will do the trick.

Place the Portabella Mushrooms on a vegetable grilling rack and remove the stem.

If you have a Costco where you live, they have an Artichoke and Jalapeno dip, buy one and use half of it with your browned turkey meat and mix well until they become one.

Place this mixture into the mushrooms and pack it lightly. Sprnkle with parm. cheese and cover each muchroom with a slice of pepperjack cheese.

Place them on the smoker and cook for 45 mintues to one hour depending on the heat of your smoker.225* for 45 minutes one hour if your temp is lower.

I must warn you, these are very filling and can easily become addicting.
