Roadside Cornish Hens

TVWBB 1-Star Olympian
Split 3 cornish hens in half and marinated in roadside marinade overnight and made another batch to baste every 5 minutes or so. Cooked at 350* direct.

Chicken with fingerling potatoes tossed in some evoo and salt.

About 5 more minutes and the chicken was done.

I have only made this a few times and this was the best yet. Chicken was very moist and tender.
 
Awe!!!!!!!!! I haven't thought of splittin those hen's in half to grill. I'm goin' to have to give that a try. Those really looked good.. Is that grilled okra and broccli?
