First Pork Butt Is On (pics)

This is my 2nd attempt with the WSM. I put a butt on around 7 AM this morning. I used no water in the pan and scattered a chimney of Kingsford over a full chamber of unlit. After assembled I put a few big chunks of mesquite in (we're in Texas and prefer Mesquite over everything else).

Rubbed it last night and put it in a ziploc in the fridge over night. Re-rubbed this morning before putting it on. Trimmed some fat off last night also.

My lid temp has been running around 250-ish all day, grate temp around 290. Butt has been slowly creeping up from 170 to 180 for a while now. Figure it'll hit 190+ in a couple hours and I can pull it off, foil it, and hold it in a small styrofoam cooler.

My bottom vents are closed except one is open just a smidge. Top vent is about 50% open.

I'll update this thread and post more pics as the day progresses. We'll see if this method works out for me or not.

I'll keep pictures to just URL's you can click on in case some have slow net connections.

My great dane puppy is always nearby when I'm doing this (she got into the ribs when they were on the counter last time I smoked, learned that lesson the hard way). Here she is saying, "Your offering pleases me."

Allright - here's the lowdown. The butt finished early - probably around 2:45 or so. Wrapped it in foil and held it in the oven until 4:45 when I began to shred it.

Here it is after being unwrapped.

And then after it was shredded and the nasties taken out. Nice and moist! Doubt you can see it in the low res pic but you can see the beads of moisture on the meat.

And my wife fixed up some sides - had a pot of beans on all day with jalapeno sausage in them for flavor.

We have some bbq sauce in a bottle that we picked up at a food festival that's got a lot of kick to it. We drizzled a little bit of it over it at mealtime and mixed it in. Was great.

Tomorrow is pulled pork sandwiches for leftovers!
