Next weekend I'm going to smoke 3 7lb. pork shoulders on my 18.5 in. bullet. I've never cooked on the bottom grate before, Approximately how much of a difference in temp. is there between the two grates?

Don't know the difference...but you can overcome it by putting the smallest butt on the bottom or, if they're the same size, rotate positions half way through the cook

Also, if you like more bark and shorter cook times, cut each butt in two and place the smaller halves on the bottom grate

MHO, don't get all hung up on the grates temp difference. It tends to even out especially over a long butt cook.

Agreed. Also, 3-7lb. butts will fit on the top grate, no problem. Put a pan O beans below em.
