Do you inject pieces of meat like a boston butt before smoking or does it matter? I've read both ways but haven't tried enough either way to notice any advantage.
 
I used to, then got away from it. Some swear by it, so try it a few times and see what you think:wsm:

Hi Neil,

A lot depends upon for whom you are cooking the meats. In the case of competition bbq, many will inject with commercial products that help increase the moisture holding capabilities of the muscles. What really happens is that ingredients in the commercial injection products help relax the triple helix protein structures so that when the proteins denature, less moisture is forced out.
