I found the new grading system most interesting:
Golden: Thin, delicate taste; try mixing it into a cocktail.
Amber: Ample and rich; enough body to hold up on pancakes.
Dark: Hearty, robust; aficionados love its deep maple complexity.
Very Dark: Bold, strong taste; good for baking.
Instead of the Grade A & Grade B that I just learned about in the last 1-3 years.... the new harvesting techniques --- not really sure what to think but if it's more effective and no downside why not?
