Pass the Sweet Stuff - Maple syrup gets a face-lift (article)


 
At the risk of running afoul with the powers that be, how the hades Is the spokesperson for the international.institute of maple syrup from Ontario?

Go east my friend, get syrup in a white can, open it with a church key and take a swig from the can like any other self respecting Quebecois.
 
Spencerville Ontario is less than an hour from Quebec. Lots of Maple syrup in Ontario as well
 
Sure lots, I've had plenty of ontario syrup, it's good but not " out of the oil can good". By volume it's still significantly behind quebec.
 
I found the new grading system most interesting:

Golden: Thin, delicate taste; try mixing it into a cocktail.
Amber: Ample and rich; enough body to hold up on pancakes.
Dark: Hearty, robust; aficionados love its deep maple complexity.
Very Dark: Bold, strong taste; good for baking.

Instead of the Grade A & Grade B that I just learned about in the last 1-3 years.... the new harvesting techniques --- not really sure what to think but if it's more effective and no downside why not?
