I just pulled three racks of back ribs off the WSM, the 11.lb. brisket is still smoking away out there. Just ate a rack and realize that this is enough food for an army.

Ribs were delicious BTW.

I still have three racks of spares in the fridge I gotta do tomorrow.

well joe, this is a good time to share with the neighbors, let them be you judges. and before long they may come by your house and do chores, everytime they see smoke. maybe nows a good time to push for that foodsaver

Trust us. You will meet ALL your neighbors. Even the ones you've never met before. That smoke goes everywhere!

Leftover smoked stuff is WONDERFUL! I always cook too much and end up with mass quanities of leftovers.

I thawed two butts for yesterday and the snow storm kept everyone from coming over.........I smoked em' anyway and I have enough leftover pulled pork for several meals!!
 
my wife'll pull the meat offa leftover rib bones an' add that meat to her salads . . . she rolls pulled pork in Boston lettuce leaves . . . makes pita pork pockets ... never went through some much lettuce before
