Smoke Day - Eye of Round

Have had this eye of round in the freezer for awhile, and what better excuse to pull it than Smoke Day?! I'm guessing it's 7-8 lbs whole. I cut 1/3 of it off for my wife and I's dinner. I get to cook the larger part on tuesday for friends!

Coated in spicy brown mustard, rubbbed with S&P, and smoked over my favorite ground coffee. First time smoking with coffee. It kinda just flares up as you sprinkle it, but the deep rich smell is nice and added a level of flavor complexity that was perfect with the pepper.

Temperature control was an issue, but didnt kill the cook. I started with a few lumps, and kettle was cruising about 275. Came back out, and all the lump had lit much faster than I anticipated and it was 450. First time trying to keep temp low with lump rather than briquette, but figured this was good cut of meat for it. Forgiving! Pulled at 145.

Overall probably 2 hours from time on the grill+rest.

Made myself a "sandwich" after dinner. Thin sliced beef with some pieces of homemade goat cheese courtesy of my friend's farm.
