I used some old school weber charcoal holders that I got on Amazon.
That plus some other mods... works great!

Got some boneless beef shortribs from Costco, quick rub and on the smoker. Excellent!
Used a plasma cutter for the pot, if you have one it's the way to go!
Went with the clay pot heat sink and seams to work great. Run dry and the temp just seems to stick at where ever you want it.
Put a thermometer just under the lowest rack, smokey mountain I think, Amazon, also great.
After this run, I did some smoked salmon and it turned out fantastic.
I love this thing!!

I used a clay saucer for a while until it cracked and broke after 4 uses. Now I use the cut out from the pot.
 
If it is the River Country RC-T2 thermometer it is pretty accurate, plus it has a calibration screw on the back if it ever gets out of whack. I have the same one on my mini and like it.

M.N.? What did you used to cut the hole through the pot? I don't have a jigsaw and was wondering if any other device can be use, I have a drill and angle grinder,,, maybe just have to buy a used Jigsaw...
 
I used a jig saw on mine, some people just drill a series of hole in the pattern of the steamer plate. Maybe you could do that.

You're right it is a River Country thermometer with the calibration screw. My mistake, I posted this late in the night. It works great, I've verified it with other thermometers.
