Coconut Shrimp & Chicken Caesar Salads.

My mother-in-law came over today for lunch and to visit for an early Easter. We decided on coconut shrimp appetizers followed by chicken Caesar salads. Turned out great!

Coconut shrimp ready to go in the oil.

Pan fried a couple of minutes a side.

Ready. Served with a pepper jelly dipping sauce.

Chicken marinated in lemon juice, olive oil and grated fennel and homemade croutons (2 day old baguette soaked in olive oil and kosher salt.

Great meal. Very easy cook; the coals were blazing hot for the oil to cook the shrimp, cooled down perfectly to cook the chicken and were almost out (perfect) to toast the croutons.

Spares on the WSM for dinner...
