Living in Holland (Europe): What kind of bacon do I need for Pig Candy ?


 
My family (with me in tow) moved to Canada from Holland many years ago. At home, we always referred to bacon as "speck". I hope this helps. For this particular recipe, you would use bacon made from the pork belly. Bacon is cured and smoked pork belly, or "speck" which I think is also cured and smoked.

I will ask the butcher for "varkensbuikspek" which is in english speck from the pig's belly.
Btw, this kind of bacon is probably the same that is used in "Babi Pangang", which is served in chinese/indonesian restaurants in Holland. A crispy, roasted, bacon, although there is also a variant with pork's meat. This is my favourite dish.
