Poutine Gravy

Since there are some truly awful gravies that get poured over poutine I figured I would post a good homemade version.

Ingredients:
1 Tablespoon oil
1 shallot minced
1 small clove garlic minced
4 cups beef stock
2 Tablespoons ketchup
1 Tablespoon cider vinegar
1 Tablespoon whole peppercorns
1/2 teaspoon Worcestershire sauce
2 Tablespoons butter
2 Tablespoons flour

Heat oil in a saucepan and saute shallot and garlic for a bout 3 minutes.
Add stock, ketchup, vinegar, peppercorns and Worcestershire and bring to a boil.
In a separate sauce pan over medium to high heat melt butter and mix in flour, stirring to make a brown roux.
Mix well into stock mixture and simmer for about 20 minutes until reduced by half and thickened.
Season to taste with salt and pepper.

Pour over your fries and cheese curds for delicious poutine!
 
I'll have to keep this in mind the next time I make some poutine. There's a small dairy farm maybe 15 minutes from my place that sells fresh curds every Saturday morning-- I need to stop by again sometime.
