Chicken Pot BBQ

Decided to make one of my favorite chicken dishes, Chicken Pot BBQ. Tastes just like chicken adobo only its sweet. Got the recipe form the BBQ Pit Boys video.

I bought some sweet longanisa for the pancit and decided to grill the rest I didn't use.

About half way through the cooking process took the chicken out and threw them on the grill

Yowza, that looks great! Couple of things I've never heard of on that plate but would love to try. Like JimK, if you don't mind I'd love to see some recipes/links.

6lbs.Chicken Thighs (or bone in chicken breast)
1 Cup Cider Vinegar
11/2 Cups Soy Sauce
11/2 Cups Brown Sugar
1 Onion
4-5 Dried Bay Leaves
6-8 Garlic Cloves
1T Black Pepper or Rub
1/2 Dozen Eggs (optional)
Place the chicken in a large soup pot with the listed ingredients and then slow simmer for about 15-20 minutes. Remove the chicken and then quickly sear both sides on the grill as shown. Return the chicken to the pot and simmer for an additional 20-30 minutes. Serve directly out of the pot or on rice.

Pancit I just kind of wing it after looking at some recipes online and add what I like from other peoples pancit I have eaten.

Leftover chicken, approx 1/2 lb. shredded
1/2 lb shrimp cut into small pieces
hand full lil smokies cut into small pieces( I tried longanisa this time)
one chopped onion
one bunch of green onions chopped
small cabbage shredded.
2 carrots sliced into sticks.
16 oz bag rice sticks, special bihon
approx 1/4 cup soy sauce (guessing here, adjust to your taste)

Break up noodles and put into a pot of hot tap water and set aside. In a wok or large pot saute everything except noodles,green onion tops of the green onions, and soy sauce in a little oil. When noodles are soft drain and add to wok, add soy sauce and adjust to your taste and fold. When its done add tops to green onions and fold again.

Gawd this looks great! I don't think there is a single BBQ Pit Boys recipe that I have tried that I didn't like. In fact, I must apologize, Im gonna have to eat a piece of my BBQ Pit Boys hot apple pie right in front of you!

I'll be doing the chicken pot pie this weekend, except I make my own dough...
 
John... I make spare rib adobo and chicken adobo then finish it off by grilling. I have the butcher cut the ribs into 3 to 4 inch lengths. The whole chicken I cut into larger pieces; legs w/ thighs or quarters.

Those BBQ PIT BOYS are off the hook. Gonna hafta get the grill out. (and we're 'sposed to have snow this afternoon).
