World BBQ

Dave,
Thanks for taking the time to chat with us! There are so many cultures and places around the world that have their own BBQ style of cooking. What are some of your favorites and how do they influence your cooking?

Quite honestly I am not totally knowledgeable about other cultures world wide as I don't have family that comes from other countries so my exposure as pretty much a full blood American Indian is pretty much the exposure I've had from my dad who grew up in the south. But I have learned how to use cedar to smoke salmon and I have learned all about lobster and clam bake barbecues. I would say that black African Americans have highly influenced me but I think they would say that their barbecue is totally of this country's Deep South. Blessings my friend... "Famous Dave"
