Smoke Day from Georgia, Island style

Influenced by a recent trip to St Lucia, we smoked a brisket with a spicy jerk rub.



Initial cutting shot:



Plating. Green fig (banana salad), and rice. The green fig salad is similar to an American mayo based potato salad. Wash down consisted of rum punch and the last of the local Piton beers we brought back.

 
Looks great! Would you be willing to share your rub or any parts of the rub?

I like jerk flavoring and I could see it going really well on brisket.
