The water pan is so deep, that if I fill the charcoal ring, the pan hits the coals. This makes it difficult to get enough coal I for a long smoke.

Question is, do u think the fact that the pan is touching the coals reduce the effectiveness as the water pan as a heat sink? I usually run the pan foiled with no water and a clay pot on top. I will sometimes use water for longer cooks that I want at 225. Thanks.

Great question. I actually think this helps with keeping and maintaining temperatures inside the smoker. You have to be patient getting the smoker up to temperature but I have found this pan does allow you to smoke for 14-16 hours with minimal adjustments.
