Here is my first try at skirt steak. I stuffed the mushrooms with steak onion underneath the steak and some peppers and cheese.Skirt steak was really tasty.I will be cooking these more often.I threw the steaks on early so the grill marks were not good.I cooked one skirt and froze the other.

We do flank and skirt steak in a very similar method. Using a Smokey Joe Silver, Start 3/4 chimney of charcoal and pour it into the grate. Heat the grill with the vents open and the lid off. The fire is very hot. Grill the steak 4 minutes each side. Remove and slice into 1/4 inch thick slices across the grain. Rare to medium rare... perfect every time.
Seasoning up to you for the occasion.
