Inaugural Smoke

Finally got to fire up the WSM today. I smoked a brisket. It went on at 4 a.m. and I pulled it when it hit an internal of 205F at around 2 p.m. I cooked it at 225-235 for four hours then I foiled it and kept it between 240-250 until it reached temp.

Best brisket I've ever cooked. This smoker is such an amazing device.

It was so long I had to fold one side - I had to fold more than this so it didn't touch the lid.

The finished product was so good.

I also made some ABTs - thanks to this site! I loved these things. They will be made again. Often.

I've been burning meat for a while.
 
Good work Cullen. Next time don't fold the brisket. Scootch the middle up a bit; after an hour or so the meat will have shrunk enough for it to fit flat.
