Hi Everyone,

New to smoking/BBQ but not grilling. Have been using a Weber kettle for years now and started to realize its limitations for low and slow. Wife bought me a 18.5" WSM for Xmas and used it 3 times already despite the snow/wind/cold. Loving it! So far smoked chicken, ABT's, BB Ribs and a Butt. On each cook I was amazed by how good the food turned out.

Thanks to everyone for all of the great tips and I hope to contribute to the community in the future!
