Just returned from Wegmans and was happy to find they have three "grades" of fresh, all natural birds: Organic/Free Range, "Premium" (grand champion breed raised to have more white meat), and "all natural". None of these are enhanced/injected, but the all natural have up to 6% retained water. I believe all three are good for brining.

Picked up an 18lb bird and a 5.6lb breast. Brining starts Tuesday. :)

Well closest one to me is about a 4 day drive:)


But yes the natural bird I purchased (18.5lb) from my local butcher said the same thing on the 6% water retention. I figure I am going to soak it in water and a few other things:) so it should be ok. I actually had the same bird last year and it was great! Mine is going down tomorrow night for a 2 day soak. Pull it out Wednesday night so it can breath for the night before it hits the :wsm:
