Turducken Loaf

Anyone can do a meatloaf, but if you're looking for a unique meatloaf, the Turducken Loaf might be just what you're looking for:cool:.

1 lb of ground turkey
1 lb of ground duck
1 lb of ground chicken
1.5 cups of bread crumbs
1 cup of cooked wild rice
3/4 cup of white onion
1/2 cup of minced celery
1/2 cup of minced carrot
1 Tbl of minced garlic
1 egg
1/2 cup of mined porcini mushrooms
3 Tbl of Penzey's Poultry Seasoning
1 Tbl kosher salt
(note: although not originally used, 1/4 lb of cubed pancetta would be a nice addition)

Mix each meat separately with some of the egg and poultry seasoning, then spread it out in a pan. The meats should have their own section in the loaf. (Only 1/2 pound of duck is shown here; 1lb is better).

Once spread out next to each other, spread the rest of the ingredients over the flatten meat.

Smoke it at 275 for 2 hours for a final temp of 170. The finished meatloaf came out perfect, the turkey and duck will get darker than the chicken as a result of the smoke, but the taste will be wonderful.
