Co-workers were very pleased!

So I had my first cook of ribs on the mini, and what better of a place than at work for my co-workers. Before they were even done they were asking about when I'm going to do it again. Needless to say they came out awesome!
I need to get better at this picture taking of the process and the finished product, I'll get there I know everyone as well as I like to see what people have going on.

My only complaint really is that I couldn't fit more on the Mini, I was able to get to St Louis style racks on the mini without cutting them. But one or two more racks would have been nice to have cooking as well. I need to modify some type of rib rack that will fit in there, or make another middle level in the smoker for a 3rd rack.

Anyone have any good ideas they have used, I don't like the idea of harpooning them all rolled up just to throw that out there.
 
I don't like the idea of no pictures...lol.You might want to try rolling them next time ....it does work.Aren't these little rascals amazing?
