I am considering the purchase of a WSM cooker but am concerned about the size of the wood I can use. I have a firebox smoker and it accepts wood up to 16" long.

What is the largest size wood that I can use on the WSM and will smaller sizes affect cooking temps / flavor?

The WSM is designed to use charcoal briquets or charwood (lump charcoal) as a fuel source, with wood chunks or chips added for smoke flavoring. You couldn't fit anything longer than about 12" into the charcoal ring. I have used small split pieces of oak as smoke wood, maybe 6" long at most.

I would not recommend trying to fire the WSM using split pieces of wood only. You will get plenty of smoke flavor using oak, hickory, apple, cherry, or other favorite wood chunks. And the real benefit of the WSM--extended cooking times and easy temperature control--is facilitated, in part, by the use of a long-burning charcoal briquet like Kingsford or Royal Oak.
