Rocky's Chili Recipe for leftover Brisket

This is a great chili recipe, if you can't find any chipotle just use 1 tablespoon of cayenne pepper.


Rocky's Chili


3-4 lbs chopped or cubed leftover smoked brisket
1/2 cup vegetable oil
5 medium onions chopped
2 large green bell peppers chopped
6 small cans Campbells tomato soup (or 3 large cans)
1 can coke
2 large cans crushed tomatoes
2 large cans whole tomatoes
1 cup ketchup
3 tablespoons ground cumin
10 tablespoons chili powder
3 large cans kidney beans
2 teaspoons cocoa powder
1 tablespoon salt
2 tablespoons chipotle or 1 tablespoon cayenne pepper
1/2 teaspoon black pepper


PREPARATION:

Saute brisket, onion, bell peppers, cumin and chipotle
in vegetable oil over medium heat for 15 minutes,
stirring frequently.


Add remaining ingredients and simmer on low for 2-3 hours.
Stir about every 5-10 minutes.

Optional: Garnish with grated cheddar or colby cheese,
finely diced onion and sliced, pickled jalapeno
peppers.
Fresh cornbread goes really well with this too!!
