Chris Lilly's Spicy Apricot Wings
---------------------------------
Marinade:
1 cup apricot preserves
1/4 cup worchestershire sauce
1/4 cup brown sugar
2 Tablespoons soy sauce
2 Tablespoons dijon mustard
2 Tablespoons Kosher salt
4 teaspoons Black pepper
2 teaspoons garlic powder
2 teaspoons paprika
1 teaspoon cayenne pepper
1/2 teaspoon ground ginger
14 whole chicken wings cut into wings and drumettes (28 pieces total)
Mix marinade ingredients in a small bowl and whisk until well blended. Place chicken in a shallow dish or resealable plastic bag and pour marinade over the wings. Cover or seal, and marinade in refrigerator for 4 hours (or better yet overnight).
Do not remove excess marinade.
Cook using indirect heat at 450 degrees F with the lid closed for approx. 30 to 35 minutes, flipping each wing once.
Remove wings from grill and serve.
This is the original recipe. When I cooked these wings, I marinated them for about 20 hours. I also cook them at about 400 degrees for 40-45 minutes and they came out very good. They were very tasty with just the right amount of heat. They were not too hot at all. These wing are really good.
