Spiced cauliflower

Ingredients : 5 tablespoons peanut oil; I teaspoon black mustard seed; 1 inch fresh ginger cut into strips finely; 1 onion, medium, cut into rings; half teaspoon turmeric; 2 star anise; 2 finely chopped chillies (or more or less, depending on how hot you like it); 1 large cauliflower broken into small florets; 1 teaspoon salt; juice of half a lemon; 3 tablespoons water, chopped coriander (cilantro).

Method : Heat the oil in a large saucepan. Add mustard seeds and cover - wait for spattering to stop, then add the ginger, onion, turmeric, star anise and chillie. Fry gently for about 2 minutes then add everything else except the water. Cover and cook gently, stirring occasionally until it begins to soften - about 20 minutes. Add the water as needed to prevent burning and keep just a small amount of 'juice' in the pan. When ready, tip into serving bowl and sprinkle liberally with coriander.
