Creamed Smoked Salmon With Peas

My Mom used to make this using canned salmon and it was always one of my favorites.
I had some extra smoked salmon so I thought I'd use that and it came out excellent.

Creamed SmokedSalmon and Peas

2 tablespoons butter
2 tablespoons flour
1 cup milk
1 1/2 cups chopped smoked salmon.
1 cup frozen peas
Salt
Pepper


On low heat, melt butter in skillet. Add flour; using a spoon, stir flour
into butter for 3 to 5 minutes to make a roux. (The roux should begin
to smell nutty but should not brown significantly.) Add milk and stir continuously until mixture is smooth. (Add a little extra milk if the
sauce is too thick for your taste.) Add peas and simmer for 5 minutes,
stirring occasionally. Add salmon and continue to simmer, stirring
occasionally, for at least 5 more minutes. Season with salt and pepper
to taste and serve.
This is great over mashed potatoes,
Potatoe pancakes,Toast or homemade bisquits.
 
This is a great combination. This is one of my Dad's "comfort" foods. He came over for dinner a couple of weeks ago and I made him salmon patties with creamed peas. Never thought to mix it together and pour it over something like garlic mashed potatoes. Makes me hungry.
 
Great recipe! I tried it today with just a few changes: added a touch of cayenne, some diced onion and a shot of the dry sherry I was imbibing to the bechamel. Served it over a nest of egg noodles. Lovely!
