More Bacon

Just a quick post to let friends know I haven't fallen off the planet; just a bit busy these days. I did manage to make more bacon this week, about 8 lbs. Same recipe as before , same excellent results. Be well and Happy and Healthy Holidays to all y'all.

glad its working for you. I've actually got a piece of belly in a dry cure. I have a bit more confidence with dry cures after doing a few rounds of pancetta, and the tenderloins. I'll let you know how it rates against the brine cure.
