Anyone have a favorite Oyster Stew recipe to share.

I make the same old noe each year;

Quart and a pint of Select Oysters
1 cup cream
4 sups milk
1/2 cup butter
Salt and pepper

I put the butter in a pan and pour in oysters and their liquor. cook until edges curl.

Also heat up milk, etc over low until hot. Pour oysters in and serve.

Would love other suggestions.

Clay,

The only things I do differently is to saute about 2 TBS of chopped shallots in the butter before adding the other ingredients, and I add a few shakes of hot sauce jusy before serving.

Sorry for the late post - I am on the road and do not log in often.

No reason to change it really. I make the same pretty much adding butter and hot pepper last, sometimes some paprika (going to try it with smoked paprika next time).

Rather than black pepper I will use fresh ground white.

I have added some shrimp, clam, or crab stock if I happened to have it.

Overall, simpler the better though!!

The stew turned out great. I highly reccomend www.oystersandmore.com if you live in the Midatlantic. Affordable and fresh to your door. You order online, then they get in the boat to get them....at your door the next day fed ex.

I have had the shucked and unshucked and they are wonderful.
