Gonna thaw a 11# sirloin tip roast for sundays cooking--any suggestions would be appreciated, thanks

I've done a lot of them and what we do is
cook at 225-250*. We mop every 1/2 to 3/4 hour. We use a mop called BourbonQ, there are other mops you could use. Cook to 140-145* internal max.
It's always been a hit when we've served it.

Jim, How do you estimate the cooking time? How long per pound?
 
Don't have exact recipe but here is the
list of ingredients base on volume in mop:
soy sauce, worcestershire sauce, tomato
puree, vinegar, molasses, sugar, black pepper, burbon,garlic powder, onion powder,
and thickner.
I cook to 130-140* internal, takes 1/2 to 3/4
hour per pound.
