K Kruger TVWBB 1-Star Olympian Nov 29, 2007 #2 I do them at ~325-350 to an internal of maybe 140. They are so lean. I like to marinate but it isn't required. I do suggest oiling before rubbing and basting frequently with a fat-based baste.
