Hi everybody. I was asked by a friend to smoke some tri-tip and ribs for his b-day party next weekend. I found out there are going to be about 20 people. I have 4 tri tips and will do maybe 2 racks of baby backs. I will probably do the BBs the night before. The party is at 3 on saturday and we are eating around 5. If I do the tri tips around 12, how long will they hold for wrapped in foil with towels in a cooler? I am doing a reverse sear, so I figured I would finish them up at the party before we eat. Will they hold that long?
