I've reviewed the increasing capacity section. I'm going to have to figure something out using a mix of all the ideas there.
I want as much realistate on a middle cooking grate as possible so I think I will order a second bottom weber WSM grate.
I want it connected to the top grate, but not just hanging there. I want it to be stable enough that I can pull both the top grate and middle grate straight up and out of the cooker and set it down as one piece and be stable enough for basting.

I also want it to be a quick-disconnect type latch or fastener (that connects it to the top grate) so it's easy enough to take the middle grate off with gloves on and it being super hot.
And when I go to purchase bolts, nuts, washers, etc, what am I looking for in terms of metal safe to use inside the wsm with temps of 400 degrees?
