3rd cooking grate and coated metal

I've reviewed the increasing capacity section. I'm going to have to figure something out using a mix of all the ideas there.

I want as much realistate on a middle cooking grate as possible so I think I will order a second bottom weber WSM grate.

I want it connected to the top grate, but not just hanging there. I want it to be stable enough that I can pull both the top grate and middle grate straight up and out of the cooker and set it down as one piece and be stable enough for basting.

Picture 7 from http://www.virtualweberbullet.com/increasecapacity.html is closest to what I want, but I only want the top and middle sections connected. I also want it to be a quick-disconnect type latch or fastener (that connects it to the top grate) so it's easy enough to take the middle grate off with gloves on and it being super hot.

And when I go to purchase bolts, nuts, washers, etc, what am I looking for in terms of metal safe to use inside the wsm with temps of 400 degrees?

So if I buy all stainless steel hardware (bolts, nuts, washers), are there any health issues with that heating up inside the WSM?

I use a couple different raised grate setups for my different cookers. Here are a couple to consider, a BGE raised grate with flip up sides.

Or a homebuilt, this is a grate from a Char-Broil Patio Caddy with carriage bolts. I kind of prefer this if I have a lower grate full of meat that needs turning, you can lift it off and on easily.

If you want that much capacity, it might be easier to stack the grates rather than using All-Thread rods. JMHO

Take a look at this link and you might get some other ideas for increasing the capacity. Even though they are "Eggcessories" Tom is a helpful guy and his stuff is Top Notch!

I have the BGE extender. I have not had many opportunities to put it in action for it's intended purpose (can't cook outside right now, long story), but I have used it for cooking chicken direct on the kettle. I got it specifically for rib cooks. It might be in my head, but I have been more successful with my ribs when they are laid out. So I got it to easily add one or two more racks. I was going to get another one for the bottom grate, but I could see some access problems. I see a few advantages with the carriage bolt idea and extra bottom grates. Stainless steal is what you want. If I am not mistaken, zinc is commonly used for nuts and bolts. It may not be problematic for WSM cooking temps, but at higher temps it is. Why risk it, go stainless.

Thanks Gary for the confirmation that stainless is ok / safe to use. I just wanted to make sure of that.

I received my second bottom WSM cooking rack on Friday. $9 from Weber, and they waived the shipping! This coming Saturday I'll be hitting the hardware store for stainless all-thread rods, washers, and nuts and I'm just going to connect it to the top rack, hanging it below about 4". And max capacity / all 3 racks filled with split chicken breast cook on Sunday.

What is the hollow tube people use to cover up the all-thread rods?

And eventually I'd like to find a fashener that is "quick disconnect" so I can unhook/unhang it in a snap.

I used carriage bolts, they aren't stainless or zinc coated. Heres a linky for some more grid extenders.

Something you might want to try with the all-thread rods are T-nuts, they will sit flush to the grates.

I certainly have been following that thread. I like the stacker, but I'm not sure if I can justify spending $70 on it. Might be better off waiting for one of the amazon specials on the wsm and spend another hundred for a second wsm.

For something thin like chicken where the 4" clearence is enough room, I think I'm going to try this $20 mod first.

I just picked up one of the BGE Extenders today. I sure wish I'd had it this past weekend when I smoked a pork shoulder, 4 racks of ribs, 3 lbs of salmon and some ABTs on the WSM!

I also ordered the Eyelet Assembly for the Remote thermometer probes. I'll be giving this all a thorough testing the weekend of the 4th.
